Alt-Enter to get out from fullscreen. Is the resulting window still gray? If not, it's probably an issue with resolution and refresh rate.

run the game with +set r_fullscreen 0 then readjust your refresh rate, resolution etc

You can also try "blindly" dropping down console and doing a /vid_restart, worked for my greyscreening.

None worked :s I've tried +set r_fullscreen and now it's just a quake's blue screen saying:

You can use mine as a base. You will need to adjust things to your setup (refreshrate, resolution, etc.) and preferences but at least you're not starting from 0.
