Whenever I hear the sentence "but it is healthy" first when someone describes food I won't try it. Other than that it depends on the definition of healthy. If eating vegetables and salad regularly but not always is healthy food then I'm doing well. If Pizza, Barbeque, Hamburgers, Pasta with lots of cheese and too much beer make it all unhealthy that's to bad, but I could care less ;)
eating one meal a day will slow your metabolism. because your body reacts by thinking 'ok i have no idea when the enxt meal is, so any food i take in, i will store as fat which can be used later'. vo0 is 100% correct when he says its very bad for you.
i find you can't go wrong with "eat little and often".
