Don't they still have silly limitations on FPS/damage display/etc? From when I tried several clients, the restrictions were what pushed me to Skulltag.

That's just whatever limits that Zdoom had when they branched from that. Whatever limits Zdoom had done away with at that time they happily let stay. They haven't actively pursued creating an oldschool port. They just stayed with what they had then and compared to Skulltag they are sticking to older school. But not old school.

Odamex is the port that actively attempts that.

I thought skulltag was from zdoom, and zdaemon was it's own port.

They're both from Zdoom, only Skulltag has kept itself updated with Zdoom progress.

- Armor/Items Respawn

While Doom supports item respawn (like health, armor, etc.) the original deathmatch mode didn't have it enabled, so dueling evolved assuming that the items wouldn't respawn. Not all leagues/tournaments are like this though, I think there are European events that use more "modern" flags. This also applies to stuff like jumping & mouselook. It's maybe worth mentioning that CTF enables all these things.

- FFA Blows

Yeah it does, seriously never play it. Play duels and CTF. If you get fed up with public CTF, come to #idl on quakenet, we have private CTF sessions multiple times a day.

It's fugly, but you can go to http://cdevastation.com/zddl/demos/season3/div1/. For CTF demos, IDL archives pretty much all of them at http://www.intldoomleague.org/demos. You can switch seasons by clicking on the season (like "Winter 2011") in the upper-right hand corner.
