2. The amount is important. Less is better than too much.
The method is important too. Putting a dot in the middle and then putting the heatspreader on it is the best method but you need to know how tiny the dot have to be.
Spreading the paste with a card ensures yoz didnt put too much on it but you may get airholes (happens rare if done correctly)

An amount the size of a small grain of rice, directly in the centre is usually ok.

1, Don't except a huge performance difference in games, most games are GPU-bound/limited. (this is even more valid if you stay on stock speed)

2, “K” CPU-s alone is not enough, you need a motherboard with a Z*** chipset to be able to OC, and more powerful CPU-s also need more power so you might need a better PSU too (but that's highly unlikely if you won't OC)

3, you have to clean the old paste from the sink before applying the new paste (edit: isopropyl alcohol will do)

4, you don't need much because the sink will spread it by itself when you tighten it at its place. YouTube is your friend, watch some videos how to do it.

5, voltage will change automatically, the motherboard will "talk" it through with the new CPU.

6, Modern operating systems do not need any user intervention when changing compatible processors, all will be automatic and will happen in the background. However, when using windows, the activation method used might be relevant: If you do not have a digital license linked to your hardware and also not using a Microsoft online account to log in, then you will need to re-enter your product key manually (more here for windows 10)

7, Do it gently and slowly and touch something grounded metal before you touch your computer parts. CPU socket are pretty foolproof, but I still saw some "nice" horror stories with bent pins and whatnot, so be careful and take your time.

My psu is a really good one, so no need to change ^^ and i don't plan on overclocking ever

my gpu is a 1070 o/c'ed, so basically a gtx 1070 Ti, i don't play games also :D i only play quake, and qc is heavily dependant on CPU :D, i play everything at lowest except 1080p renderscale 100%

It is probably a digital license of the hardware. It will activate itself automatically most probably. See the link I posted.

Clean the old paste away with isopropyl alcohol cleaner. You can get this at hardware or electronic stores.

Amount of new paste is very small. like maybe 1/3rd of a garden pea is needed at most, if that.

I do it by place a small dot in centre of cpu. Get a plastic sandwitch bag to cover your figer and smoosh the paste around so it is nice and smooth and thin all over top of cpu. Then take another dab and place it into centre. The heatsink will squash this down. Any parts that are thin you can place just a tiny dab as you will have some excess paste probably on the nozzle of paste tube still. Total amount of paste still < 1/3rd garden pea. It does not need to get on the very edges of cpu just the centre area and you do not want it to be flowing over edge of cpu when heatsink is applied (or should I say ventirad lol)

If you dont know what you changed then I am going to recommed to go into bios and hit the "load optimised defaults / Defaults / Safe defaults " whatever its called before you remove old cpu. You have likely changed something with the multipliers/dividers or turbo settings.

My i5 is overclocked to 4.0 but as soon as I am on desktop it downclocks to 800mhz, cpu voltage drops right down, and temperature of cpu goes to room temp of even 17 degrees. Its best to keep the power saving features enabled, or do an overclock then turn them back on.

Running fans at max speed is also very questionable. I have my fans at locked speed of 5v and have tested on the hottest of days (40deg C) outside that my cpu is still under 60 during prime95 test. So this is only 40% fan speed I need and thats better for my ears.
